ğŸŽ„Christmas Menu | French Style Red Wine Chicken Stew - Coq Au Vin

This French classic homemade dish is a hard-cooked essential for the winter table. This recipe is a simplified version that can be made in an hour and tastes amazing enough!
500g chicken thighs
3-4 slices of air-dried ham
Salt and pepper
2-3 sprigs of thyme
15g butter
1 tbsp olive oil
2 cups flour
1/2 onion
3 cloves garlic
1.5 tbsp concentrate Tomato Paste
2 cup red wine
1 cup chicken stock/water
1 carrot
1 cup mushrooms
Salt and pepper

🐔 Steps:
1. Rub the tops of the chicken thighs with a little salt, pepper and thyme and dredge them in a thin layer of flour.
2. Melt the butter in a pan, pour a little olive oil and brown the chicken thighs.
3. Remove the chicken thighs and set them aside to crisp the ham slices in the same pan. 4.
4. remove the ham slices, add some olive oil to the same pan, over medium heat, sauté the onions, garlic, mushrooms and carrots with the tomato paste for about 5 minutes, add the thyme and adjust the saltiness with salt and pepper.
5. Pour in the red wine, put back the chicken thighs and add stock (or water) until it doesn't cover the thighs.
6. Bring to a light boil over low heat, cover and simmer for ~25 minutes.
7. In a small bowl, make a gravy with flour and water over low heat.
8. garnish with crisp ham slices.
